A 100% Mexican dish, chilaquiles date back to pre-Hispanic times, when ancient Mexicans prepared a meal called "Tlaxcalli" which consisted of corn tortillas dried in the sun and then cooked. Chilaquiles have become a characteristic element of Mexican culture. That is why at Época we pay tribute to them.
